What’s Involved?

This workshop series will take you on a journey across the lands of the Wardandi, Kaniyang, and Bibbulman peoples, who have lived in the South West for over 45,000 years. These lands, once a seasonal gathering place rich with food sources, continue to hold deep cultural significance.

Participants will explore behind the scenes of the region’s renowned food and hospitality industry, while inspiring innovative, culturally responsive education practices.

Each day will offer a perfect blend of expert-led workshops, cultural immersion and meaningful discussions on innovative food education. You'll discover local providores, connect with Aboriginal culture and gain insight into local industry practices and the region’s culinary scene as you improve your knowledge, practice and skills. 

This is more than professional development for teachers, trainers and industry professionals – it’s a chance to explore, taste and learn on lands of the one of the world's oldest living cultures. It will be an unforgettable experience that will nourish both your professional and personal growth.

    • Cheese viewing, making, packing workshop and tasting at Harvey Cheese.

    • Olives: brining and marinating Tanuja Sanders. 

    • Building a board with chef and specialist in charcuterie construction, Melissa Palinkas. 

    • Marine environment exploration at the Dolphin Discovery Centre. 

    • Insights into Bunbury’s primary industries on an eco boat cruise. 

    • Wardandi Boodja: Bush foods chat with Dale Tilbrook.

    • Chocolate workshop with Romain Lassiaille Maison Lassiaille. 

    • Light lunch, wine tasting and discussion at Fishbone Wines. 

    • Margaret River Chocolate Factory tour and sampling with Pam Wilde. 

    • Coffee roasting at Providore.

    • Plating up techniques with chef Tanya Healy. 

    • Native floral table arrangements.  

    • Balancing flavours in non-alcoholic beverages with Johnese Mullen.
