The PPP team had a busy start to 2023, March being a highlight with the World Indigenous Tourism Summit (WITS) held at Crown Perth featured PPP’s Djinda Ngardak Culinary Program.

Some of the journeys and outcomes will be talked about for months and years to come but PPP are excited to share an article about our Djinda Ngardak Youth Ambassadors who attended WITS. The article is particularly relevant, as it encapsulates the essence of the 2023 Reconciliation Week - Be a Voice for Generations.

Over the past 6 months Prepare Produce Provide (PPP) Executive Officer, Cath MacDougall, has been collaborating with Crown Perth as part of the World Indigenous Tourism Summit (WITS), held 12th - 16th March 2023. This event has been developed to bring together First Nations peoples to celebrate Indigenous tourism, stewardship, culture and the youth.

Cath has utilised PPP’s very popular Djinda Ngardak Program for WITS. The program has been developed to promote strong cultural values and identity while developing high level skills and understanding of the hospitality industry. The program achieves this via culinary master classes with industry professionals, held over 3-5 days, to develop dishes using local produce and traditional ingredients from Western Australia. This period of learning typically culminates with the student utilising their skills, and with the assistance of the PPP team of chef's and teachers pull together a sumptuous menu showcased at a Djinda Ngardak gala dinner.

PPP has provided the Djinda Ngardak Program to Aboriginal students from WA schools since 2017 in various locations around WA, including Government House, and is excited to provide this experience for over 100 WA students this week. The students signed up for WITS have been attending Chocolate, Non-alcoholic Beverage and Cultural Culinary Sculpturing Masterclasses over the last week.

The skills achieved and the products from these masterclasses will be utilised by the students who will be assisting the PPP and Crown Perth chefs on the night at the gala dinner for 600 people.

The menu and the beautifully crafted sculptured center pieces for 60 tables, have been carefully created over this week all geared to culminate into a beautiful explosion of colour and taste for all attendees of the gala dinner night. Artwork for the menus is also being provided by PPP via one of our Indigenous Youth Ambassadors Molly West.

In terms of educational outcomes for these student, the workshops, masterclasses and experience have been mapped to competencies for Certificate I & II Hospitality and Cookery as well as the Aboriginal Cultural Standards Framework. This will allow students to meet some elements and criteria towards their qualifications. For the Certificate teacher, this experience contributes towards the requirements for industry currency and is also an opportunity for networking.

The WITS Week

The program below is a snapshot of what wonderful experiences the students have and will provide. Sunday 12th March, they kicked off the beginning of their full preparations at Crown for the gala dinner and met, to name a few, PPP chefs Paul Iskov, Tanya Healey, Raylene Brown and Liz Klokeid, Elder and Specialist food products Dale Tilbrook, Crown Chefs -Sean Marco, William Park, Kyle Jeon and Muthu Lashintan.

This is just the tip of the ice burg of who these youth and their teachers will meet, what experiences they will have, the skills they will build that will lead them into some exciting futures.

Djinda Ngardak World Indigenous Tourism Summit 2023

Prepare Produce Provide (PPP) collaborated with Crown Perth as part of the World Indigenous Tourism Summit (WITS) which brings together First Nations peoples to celebrate Indigenous tourism, stewardship, culture and the youth. PPP is honoured to provide a rare opportunity for students and teachers to engage with a variety of programs developed around the summit.
